Sweetloaf is a slightly sweet Meatloaf stuffed with Sweet Potato. I had to improvise a lot from a few recipes I didn't really follow, and used a Maple Bourbon Glaze because I used up all of my regular sugar making bar syrups and a bottle of Bourbon was strangely within a closer reach than the cider vinegar that I would have normally used in a glaze... Also ended up using the lightly sweetened Multigrain Cheerios since I didn't have breadcrumbs... and then I used Sweet Onions because, well, 'duh. So... Sweetloaf.
- 1 pound sweet potatoes about 2 medium, scrubbed clean and chopped into 1" cubes. I guess you could have peeled them if you wanted to, but the skins are awesome to keep on.
- 1 stick unsalted butter cut into pieces, at room temperature
- 1/4 cup milk or milk substitute, I usually use cashew milk
- 2 teaspoons chives finely chopped
- salt to taste
- 1/2 cup Multigrain Cheerios crushed (or, well, actual breadcrumbs)
- 2 tablespoons extra-virgin olive oil
- 1/2 medium onion diced
- 2 cloves garlic minced
- 2 teaspoons dried oregano
- salt and pepper to taste
- 2 1/2 pounds meatloaf mix or a combination of various ground animals
- 2 teaspoons Worcestershire sauce
- 2 large eggs lightly beaten
- 1/2 cup ketchup
- 1 tablespoon maple syrup REAL maple syrup
- 1 tablespoon bourbon go ahead, use the cheap stuff

Bring a large pot of salted water to a boil.

Add potatoes and cook until tender, 20 to 30 minutes.

Drain well and return the potatoes to the pot.

Add butter and mash until smooth then fold in the milk, chives and 1 teaspoon salt until well combined.

Set aside.

Preheat the oven to 350 degrees F (175 C in civilized countries)

Crush your Cheerios in a large bowl and set aside

Heat oil in a skillet, add onions, garlic, oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper and cook, stirring, until onions are tender, about 8 minutes.

Let cool slightly.

Add the onion mixture to the Cheerios along with the ground meat and Worcestershire sauce.

Mix it all together

Add the eggs and mix it completely into the meat mixture.

Line a baking sheet with foil.

Transfer 1/2 of the meatloaf mixture to the prepared baking sheet and gently press into a 12- by-3-inch rectangle.

Gently create a well down the middle of the meatloaf mixture with a 1/2-inch wall on all four sides.

Spoon the mashed potato mixture into the well.

Working with a quarter of the remaining meatloaf mixture, gently flatten the mixture with the palms of your hands.

Lay the meatloaf mixture over 1/2 of the mashed potatoes.

Repeat with the remaining meatloaf mixture ensuring the potatoes are completely enclosed.

Whisk together the ketchup, maple syrup and bourbon in a small bowl.

Spoon the glaze evenly over the entire loaf.

Bake until an instant read thermometer registers 160 degrees F (~70 C) in the center of the loaf, about 45 minutes.
