1 1/2 oz Absinthe
1/2 oz Orgeat Syrup
1 oz Almond Milk
1/2 oz Rich Simple Syrup
1/2 oz Lemon Juice
1 egg white
2-3 Dashes Wormwood Bitters
Dry shake (no ice) ingredients vigorously to ensure the egg white and milk are mixed and frothy. Add ice and shake again. Strain into a highball glass and top off with Sparking Water (tho it may be worth trying with Sparkling Wine like a French 75).
This has been updated on September 20th 2015, I changed the ratios of a few ingredients and added the Lemon Juice back in. I really have no idea why I’d take the Lemon Juice out of an Egg White Fizz drink anyway. Baffling.
