The Wink on Repeal Day

2 oz OMG Gin
1/4 oz Cointreau
1 bsp Simple Syrup
1 healthy dash Peychaud’s bitters
rinse At. Antoine Absinthe

Rinse an Old Fashioned glass with Absinthe, add ice to chill. Stir remaining ingredients with ice separately. Remove ice from the Old Fashioned glass and strain the drink in to that glass. Express a Lemon peel over the glass and discard.

For Repeal Day I thought I’d come up with a Gin variation of a Sazerac only to find that it pretty much already existed as The Wink. It is a little different than a standard Sazarac with the addition of Cointreau and the omission of Angostura along with Peychaud’s that I often see. I may try this with just a standard swap of base liquors but I think the balance here works beautifully well. I’m actually surprised that I didn’t look for this at some point before.
