Pandemic Dram: Eddy Pimms
2 oz Berkshire Mountain Distillery Greylock Gin
1/2 oz Pimm’s no.1
1/4 oz Lucid Absinthe
2 oz Eddy East Side
Crabbie’s Ginger Beer
Shake first 4 ingredients with ice and strain into an ice filled Collins glass. Fill with Ginger Beer.
Here is the second in the Eddy mixers. This one is The East Side, a delicious mix of fresh cucumber, mint and lemon. To me it has a bit of Dill in it, but that may be the Cucumber and Mint together. After giving the mixer a bit of a taste I felt it needed a bit of a Pimm’s Cup treatment. It seems that I’ve never actually made a proper Pimm’s Cup on this site, but I did make another filch called The Dread Pirate Pimms.
Unfortunately I was out of fresh citrus to slice up and didn’t think about adding sliced Strawberries until well after I made the drink. That said, I’ll probably try this one out again soon after my next perilous trip to the grocery. This actually worked pretty well as it is. The initial Dill-ness put me off initially but when it was all mixed together it was all lovely cucumber goodness. Definitely a summer drink, not as light as a true Pimm’s Cup, but richer in flavor and the more sips I take the more I like it.
I’ve frozen all of the remaining mixer I haven’t used up to save for a later date. I ended up freezing all of the Spicy Pineapple, it was a bit too spicy for me, and I couldn’t think of anything it would work with other than Tequila. I may, however, use it to make a super spicy marinade. Add some Tamari, Brown Sugar or Honey, and I could make a sick Teriyaki.
